Carpaccio
Rabbit saddle fillet is cut into slices approx. 5mm (0.2 inches) thick and flat tenderized. As carpaccio with olive oil, salt and pepper it’s a deliciously light appetizer. It is also easily prepared from rabbit saddle.
Roulade
Rabbit sausage meat wrapped with thin flank into an attractive shape and sealed with a small skewer. Highly delicious with sauce.
Meatballs
Rabbit leg chopped into small pieces and made by hand into small meatballs. Roasted gently with sweet and sour sauce. Ideal also for Asian recipes. Serve as a traditional dish with mashed potatoes and gravy in ’granny style’.
Marinated Cutlets
A very thin and tender cutlet from rabbit fillet with the choicest coating. Cutlet and chips 2.0.
Whole rabbit
A whole rabbit offers a great variety of cooking options. Delicious when traditionally braised in a savoury sauce.
